Wine tasting: Champagne and sparkling wines

There was a time when every second bottle of sparkling wine could be labelled Champagne with capital or small letters. That is no longer the case! Now only wines made from authorised grapes from the famous region in the north-east of France can be called Champagne.

But how do you actually make those magical and uplifting bubbles? And what is the difference between Champagne, Cava and other sparkling wines?
